Shrimp & Leafy Greens Wonton Cups

Ingredients

  • ½ cup mayo
  • ½ cup sweet chili sauce
  • 24 wonton wraps
  • Cooking spray
  • Haven Greens Baby Spring Mix
  • 12 small shrimp, fully cooked and cooled
  • ½ cup red bell pepper, thinly sliced
  • ½ cup mango, thinly sliced
  • Instructions

    1. To make the wonton nests, spray a 12 cup mini muffin pan with cooking oil. Gently mold the wonton wraps into the cups, 2 per cup. Spray with cooking oil once more and bake at 300F for 10-15 minutes or until golden. Set aside to fully cool. 

    2. While the wonton nests are cooling, mix mayo and sweet chilli sauce together and set aside. 

    3. Gently place Haven Greens Baby Spring Mix, peppers, mango, and shrimp into the wonton nests. 

    4. Drizzle with sweet chili mayo and enjoy!
